One-Pot Gyoza in Red Curry with Pak Choi

Ingredients

  • 16 pcs Gyoza
  • 2 cans Coconut milk
  • 3 tbsp Red curry paste
  • 2 tbsp Soy sauce
  • 2 tsp Sugar
  • 2 pcs Lime
  • 3 pcs Shallots
  • 4 cloves Garlic
  • 1.5 tbsp Chili flakes
  • 40 g Sesame seeds
  • 2 pcs Pak choi
  • 1 pc Red bell pepper
  • 2 bags Broccolini/Bimi
  • 8 tbsp Neutral-tasting oil

Method

  1. 1Preheat the oven to 200°C.
  2. 2In an ovenproof dish, add curry paste, soy sauce, sugar, and coconut milk. Mix well.
  3. 3Cut the bell pepper and broccolini into large pieces and add them to the coconut milk mixture.
  4. 4Add the gyoza and mix well so they’re covered by the sauce. Cover the dish with foil and bake for 20–25 minutes until the gyoza are fully cooked.
  5. 5Meanwhile, finely chop the garlic and shallots. Put the shallots in a pot with the oil and let simmer for 10 minutes until golden. Add the garlic and simmer for another 3–5 minutes.
  6. 6Remove the garlic and shallots from the oil and let them drain on a piece of kitchen paper.
  7. 7Add chili flakes to the warm oil. Let it cool slightly, then return the crispy garlic and shallots to the oil. Season with a little salt.
  8. 8Cut the pak choi into quarters and rinse well. Fry them in a pan with a little oil until golden.
  9. 9Cut the limes into wedges.
  10. 10When the gyoza are ready, mix everything together. Sprinkle with sesame seeds, add the fried pak choi, and drizzle the spicy chili oil over the top.
