Tortelloni Bake

Ingredients
500 g fresh tortelloni
1 can chopped tomatoes
1 red bell pepper
1 zucchini
125 g fresh mozzarella
1 onion
2 cloves of garlic
2 dl vegetable stock
Method

Preheat the oven to 200°C (400F) (fan).

Finely chop the onion and garlic. Cut the bell pepper and zucchini into cubes.

Sauté the onion and garlic in a pot until golden. Add the bell pepper and zucchini, and let it cook for 5 minutes.

Then add the chopped tomatoes and vegetable stock. Let the sauce simmer for 5–10 minutes. Season with salt and pepper.

Spread the tortelloni in an ovenproof dish and pour the sauce over. Tear the mozzarella into smaller pieces and distribute evenly on top.

Bake in the oven for about 15 minutes until the cheese is melted and lightly golden.
