Tortelloni Bake

Easy tortelloni bake that taste great for everyone in the family.

Ingredients

  • 500 g fresh tortelloni
  • 1 can chopped tomatoes
  • 1 red bell pepper
  • 1 zucchini
  • 125 g fresh mozzarella
  • 1 onion
  • 2 cloves of garlic
  • 2 dl vegetable stock

Method

  1. 1Preheat the oven to 200°C (400F) (fan).
  2. 2Finely chop the onion and garlic. Cut the bell pepper and zucchini into cubes.
  3. 3Sauté the onion and garlic in a pot until golden. Add the bell pepper and zucchini, and let it cook for 5 minutes.
  4. 4Then add the chopped tomatoes and vegetable stock. Let the sauce simmer for 5–10 minutes. Season with salt and pepper.
  5. 5Spread the tortelloni in an ovenproof dish and pour the sauce over. Tear the mozzarella into smaller pieces and distribute evenly on top.
  6. 6Bake in the oven for about 15 minutes until the cheese is melted and lightly golden.
